I'm looking for anime adaptations which contain (almost) the whole story of the source material or which doesn't brought the feeling of being really incomplete (but still non-original anime). It doesn't have to be in one season. The genres I'd like to watch really depends on of the moment but no hentai, ecchi or harem. Thanks in advance !
Since my anime and manga list are nearly empty here's some I can think about I've already watched and/or read : Death Note, Monster, Erased, parts 1,2,3 and 4 of Jojo's bizarre adventure and...there're gaps in my memory.
Fullmetal Alchemist Brotherhood on your PTW already.
Guilty Crown (Original series)
Initial D (last season is literally called "Final stage")
RoboticsNotes
Mirai Nikki TV
Angel Beats

Darling in the Franxx (Original series)
Based on a Visual Novel with two seasons:
Clannad
Technically all the Fate stuff, they're based off a visual novel as well and the seasons are pretty complete. However, the tricky part is trying to figure out in which order to watch them so maybe look that up before jumping in to it:
FateZero
Based on a manga:
Kanata no Astra
A movie based on a manga:Koe no Katachi
A show based on a light novel. I'll say that the anime doesn't adapt the entire series of the light novel, however the show is quite complete and doesn't make you wondering about the ending. Also, supposedly the light novel where the anime ends isn't that good:
Sakurasou no Pet na Kanojo
Pretty sure this covers the entire light novel:
Toradora
The same goes for this:
Violet Evergarden
I'm not sure if this is what you're looking for because the only one on this list that I've actually read the source material for is Bakuman. However, these gave me the feeling of having an "ending" rather than a nebulous "maybe there'll be another season" (from what I remember)

anilist.co/anime/387 (not sure if this counts as an "adaptation", but it feels complete by itself)
anilist.co/anime/239 (this is an adaptation of a classic novel, if that counts :P)
anilist.co/anime/2251 (don't really know what the status of this is as an adaptation, but from what I remember it feels complete, though it's been a while since I watched it)
anilist.co/anime/99420 (I think this adapts most of the manga, though I might feel differently about the ending once I've read it)
These ones I haven't watched everything of, but the parts I've watched feel complete by themselves and I get the feeling that they're fully adapted

ARIA The ANIMATION

These two adapt part of a series, but I feel like they can stand on their own

If you're okay with the romantic comedy genre, Itazura Na Kiss would be a good option. It covers all of the manga and interprets a potential ending, as the original author died before she could finish the manga.
Also, I would strongly recommend Gosick. It has one of the best endings (plot-wise) that I've come across in a while.
Finally, I would suggest Erased. I haven't read the source material, but it tells a gripping story that has a complete plot.
All of the series I've watched that either actually cover all of the source material or at least felt like an ending
