I'll admit, we have quite the different tastes, which makes recommending things a little harder. But you seem to put quite a lot of value into artistic side of things: animation, artstyle...
So maybe give this a try:

ah man I've heard that's a good one and I've been meaning to watch it, I haven't read the book it's actually based on (Count of Monte Christo, which is a well known classic) so I'm not sure if I'd enjoy it more prior to reading the actual book or after it.
I'd recommend Clannad/Clannad Afterstory, since it seems you enjoyed Angel Beats/Your Name. Also seems like you enjoyed Bunny Girl Sempai, so I'd recommend Suzumiya Haruhi no Yuuutsu
It's basically a predecessor to Bunny Girl Sempai (was made earlier) and shares a lot of the character tropes and stuff. I definitely recommend watching the movie (Disappearance of Haruhi Suzumiya) if you like the series!
Ah, Haruhi... probably THE most classic show I haven't seen xD I really should fix it one day =)
And I've heard that Clannad (and especially afterstory) are good, but lean a bit more into drama? I tend to avoid tearjerkers these days, but maybe, if the mood is right =)

And as far as Monte Christo goes, the connection is very minimal, so I'd say you wouldn't miss out on much if you don't read it.
np and yeah Clannad for sure does lean into drama sometimes, especially afterstory. There's a mix of comedy and slice of life stuff so that it doesn't get too heavy, but I agree with you on the mood being right.
Noted for Monte Christo, I think I'll give it a watch in that case. Currently finishing up kenshin which has been pretty fun, so I'll give it a go after that!
I'm currently at episode 6 of Haruhi, should I watch using broadcast or chronological order?
I watched it in broadcast order, but you could honestly do either. A lot of people recommend chronological order because it makes the series easier to follow but I still enjoyed watching it in broadcast order.
Definitely do make sure to watch the movie once you finish the series because imo that's the best entry out of all three of them.
