You can always watch a few episodes, and if you like it, that means you can get 900 episode's worth of enjoyment lol. And you can always start with the manga first until it reaches the point where it "gets good" for you, at which point you can switch to the anime, or stay with the manga, since manga is always going to go by faster (so you waste less time).

As a One Piece fan, if you still don't like it after ONE HUNDRED AND FIFTY episodes, you should just drop it. The story doesn't get better or worse after the time skip, it's pretty consistent in terms of quality.
Some even say it gets worse post time skip, but that's mostly nostalgia talk in my opinion.

You summarized the series, maybe add a bit of politics, and that's just what One Piece is. If that's not for you, please stop wasting your own time...
I feel bad for you, there's probably a bunch of other great anime that you could watch while ENJOYING yourself MUCH MORE.
Also, there's no real reason to go through "the big three", it's like forcing yourself to listen to every pop album released in the past 2 decades just because they had a lot of sales/streams!
I'm 425 episodes into it, and I'm really liking it.
If you're looking for a battle shounen, I'd say look elsewhere. There are fights in One Piece, but it's not the main draw.
However, if you're a fan of the adventure genre, it has a great sense of adventure, and a lot of that has to do with the variety of the world and how it's built out over time.
Of course, if you're put off by the character designs or the goofy humor, can't do much about that, the show has it in spades... but for somebody like me who really enjoys that kind of stuff, and whose favorite genre is probably adventure, the show has been a blast, despite the somewhat slow pacing the show eventually ends up having.
