I tend to prefer anime in most cases- but I also want to get the full experience from a story. So what are some anime whose source material is better hence I should read/play it it.

The manga was my childhood, but the anime is complete trash.
MegaMan NT Warrior
Yakusoku no Neverland Season 2: Just read the manga. I can't stress that enough. The fact that the score dropped from an 8.32 in the beginning of January to now a pathetic 5.96 on MAL is all you need to know about it.

God of High School
This does also count for Tower of God and Noblesse (although I haven't seen the anime of those).
Higurashi (VN) and Umineko are two good examples.
Higurashi is regarded as a good anime but the VN is much better because of the time it takes to flesh out the characters and specific point of view narrative.
Umineko's adaptation is really bad but the VN is an amazing experience.

i think that the manga has more detail when it comes to certain things and details, though i will admit that the scene in the anime that goes on before L's death (that wasn't in the manga) is pretty fuckin good

The Berserk manga is an absolute masterpiece.

Is the 1997 adaptation worth watching even if I have not read the manga?
100%. That's actually how I was introduced to Berserk in the first place.
I watched the 1997 anime (which ends on a massive cliffhanger) and immediately went to read the manga because I had to know what happens next. The 1997 anime cuts out some material, but nothing too major. If you're interested in checking out the anime, I'd highly recommend it.
Also, the soundtrack is AMAZING. It does such a good job of setting the atmosphere for the series, I genuinely can't imagine reading the Berserk manga without listening to the old 1997 ost along with it. Kentaro Miura (creator of Berserk) even admitted to listening to the soundtrack from the 1997 anime while he writes new chapters. If that's not an endorsement, I don't know what is.

The answer is... most things that have a source material. It is pretty rare that you find an anime that is actually better than the source for someone who enjoys both mediums equally (most lighthearted sol is better as anime probably)
There are very few things that I've actually seen both the anime and the source material of; I usually only one or the other.
One show I did see both of (with manga > anime) is Ura Sekai Picnic.
I was also told by a friend to try the visual novel of SteinsGate, as it's supposed to be much better than the anime.
The manga is objectively better than both of the anime’s. The original has a lackluster ending and is boring to sit thru. The Brotherhood version has comedy during serious moments and it’s still boring. The manga is better because the plot has no humor, pacing depends on the person and characters have more personality to them.

Railgun got a good adaptation, I can't speak for Accelerator since I haven't read its manga, but Index's adaption was nearly abysmal. Its low budget shows throughout, with poor animation and pacing, which culminates in Season 3 where J.C.Staff squeezed ~10 volumes of the light novel (around 2000-3000 pages of content) into 26 episodes.
It's a shame, because the Raildex world is fascinating, and Kamachi Kazuma wrote such an intriguing story with a cool MC just for it to be turned into a generic harem anime with a boring self-insert protag. It's especially sad since its sister series Railgun was clearly given more budget despite being a side story.
The music is still pretty great, and the voice acting is well done considering the circumstances (I think Accelerator was Nobuhiko Okamoto's breakthrough role, and my personal favourite voicework of all time), but once you've got a feel for how the characters speak, reading the novel is 100x better.
