This anime doesn't hold your hand to teach you science. But it did prompt me to look up some theories/history in google. The VN sometimes explain some comcepts/theories.

Detective Conan kinda does. At the very least I'd say it's intellectually engaging to a degree.

For that stuff I'd recommend YouTube instead of anime. Here's a great one

  I second Moyashimon. It teaches about the different micro-organisms, with the bighest theme being around alcohol production.
  
  It's a really fun watch as well, definitely recommend!

The Case Files of Jeweler Richard
I have yet to complete it as i wasn't in the proper mood whilst watching it.
But it teaches you about jewels from what i remember from the few eps that i watched. It seems very in-sighting tbh. (Thats if you consider learning about rocks and stuff science)
