I'd like to get some anime recommendations...
I prefer complex plots or good story/world building like Re:zero Mushoku Code Geass etc. Genre neither release year isn't important but I'd appreciate if u explain the plot and characters about 2 sentence.

probably my favourite series and I'm guessing you know what it's about but just in case
Tenma is a neurosurgeon who one day makes the decision to save a child's life over a mayor's because he believes all life to be equal.
fast forward about 9 years and that child has grown into a sociopathic mass-murdering mastermind and Tenma has been wrongfully accused of the crimes and put on the run.
seriously good shit, albeit with some early pacing flaws so it is a slow burner, however is absolutely worth the pay off.
You can check out Samurai Champloo it is in your plan to watch list as well. About 2 samurais and a girl adventuring.

Also I would suggest watching Gurren Laggan I believe it has both a good plot and a fine world building. About some underground guys going to the surface or something (forgot what it was really about sorry).

Honestly I don't want to ever watch monogatari series there's no particular reason for it but I heard about Samurai and Gurren will give it thought for them thanks
Oh why is that you don't want to watch Monogatari series. I believe they are very entertaining, they are also one of the best directed anime, has a very unique style. But nevertheless I can see how a person might not want to watch it.
But, regarding the other two, have fun enjoying them then I guess.

Depending on how you look at it the story could be complex, but it has a good story with literal world building. Basically all humans get turned into stone around the world and after thousands of years pass, a very smart dude named Senku plans to free everyone from stone and rebuild society. It is my favorite anime of all time, so hopefully you might find it appealing.

Now the magical notebook is used for horny stalker girl to get laid, but two teenage boys are stalking stalker girl trying to steal her notebook to save their dying sister.
Also their dying sister does this a lot and its hilarious.
