I've been taking a look at my (short) list of completed anime, highlighting the oldest anime i've ever seen so far. I knew in my childhood some relatively old anime, such as Beyblade, Yu-Gi-Oh!, Fly, Dragon Ball and etc... but these I never managed to complete, and i barely remember that.
But among the older animes that i have actually finished, i consider almost all of them as indisputable classics, such as Versailles no Bara, Cowboy Bebop and Evangelion.
And among the elders, the one i most enjoyed, got involved and dedicated myself to watching was Ginga Eiyuu Densetsu (affectionately called LoGH or LotGH)...
So, do you guys also treasure some anime that has already passed the 20 years since released?
So, that's it..
I hope you revive your nostalgia factor :)
Here a whole bunch of 20th century anime that I've rated 8/10 or more. And no « nostalgia » here, they're just good:

I'd say a classic would be an anime that excels at the genre they represent. Like a series that maximizes it's story in order to provide the best content for the targeted audience of said genre.
For example:
I'd say for a Psychological thriller it is indeed a classic.
Attack on Titan
I think series like Attack on Titan has classic potential, but it is too soon to label it a classic as the story isn't finished.
In short I'd say a classic is a great anime with little to no flaws with a story that has finished.
Some more examples of classics:
Rose of Versailles
Fullmetal Alchemist Brotherhood
Monster
Bakemonogatari
Cowboy Bebop
Neon Genesis Evangelion
Evangelion and Serial Experiments Lain are absolute gems; in the Shounen realm, Saint Seiya (1986) is very good up to the end of the 12 houses arc; Ima, Soko ni Iru Boku is a good 90's dark isekai; In the romance department, Karekano; Kasei Yakyoku deserves a watch in my opinion; Top wo Nerae Gunbuster.
Recently watched it and The End of Evangelion is a fucking masterpiece. Provides a much more detailed conclusion to the TV series. Must watch for any anime fan in my opinion. Shin Seiki Evangelion THE END OF EVANGELION
I'm not sure how old we're talking but:
YuuYuuHakusho
Samurai Champloo
Cowboy Bebop
Shin Seiki Evangelion
^ the movies as well for CB and NGE
I watched all of these recently, like within the past couple of years and they were fantastic!
Movies:
Akira
And any Studio Ghibli movie tbh
Not sure if Bleach counts as a classic but its the oldest anime i have seen and its one of my favourites
Bleach
