What type of games do you wish had an anime adaptation? I'd go with:

I am going to go a little out there and say VA-11 Hall-A: Cyberpunk Bartender Action. I think it would be a interesting mix between slice of life and cyberpunk.
I'd like to see that. In VA11 there was some world building, but generally you didn't know much about the world outside the bar. Part of that is due to show don't tell, which works well for a VN style game, but it left me wanting to know more about the world.
I feel like if there was an anime for it then that could scratch that itch a bit

Just goes to show how much you like the VN! Yeah I have really been wanting a new cyberpunk anime for quite some time. I think VA-11 Hall-A would be a pretty interesting show but the one I really want to see is a Blade Runner anime directed by Shinichiro Watanabe. He short for Blade Runner 2049 was fantastic and a 25 episode series set in that world would be great.
I don't think it will work that well as an anime. The game works cause you're directly engaging with the characters and making drinks to keep yourself occupied. In anime it will episode long just 2 character talking.
Only way I see it working is if they expand on the characters and thus the world.
I think the characters are fleshed out enough for a short film or at most a 12 episode series. When I thought about it I was not thinking about a direct adaption of the VN but a loose adaption of the world and characters. I agree that the character interactions are the most important part and I think you can experiment with that and add new aspects to the characters.

Something with a promising plot like Final Fantasy VII Compilation. Can´t get through the game, the huge saving point gaps and the very old MMO feel are just not for me but heard the story line is very good.
Is Final Fantasy VII Compilation something different from the base FF7 game?
Anyway you can just wait for FF7 remake game.
I already played the remake of FF7, for PC. Still ~30 minutes in between save points for me. Or maybe I just have no clue... the combat system is not my thing either (if it had one like Kingdom Hearts at least). Compilation = all related works to the FF7 game, for example other games that continue/flesh out the plot (in this case prequel on PSP and ~2 sequel movies).
A complete remake would be awesome.
I don't play JRPG and they are probably more suited to being Anime but I'll talk of western games:
Multiple season anime on Mass Effect & Dragon Age (the 2 movies that exists are shit)
Assassin's Creed but with revamped & interesting plot. I see a lot of untapped potential in the series.

Maybe It would be difficult to translate it well into an anime, since it's narrative is deeply engrained in it's game mechanics, but I would like an anime set in the Zero Escape franchise (I know that it exists an ONA but that's just a little part of the second game's first minutes)
Other than that, maybe one about the Fire Emblem franchise would be nice as well.
War of the Human Tanks series having anime adaptations would truly be a dream come true for me.
