It has been 13 years since the 2nd season of the anime aired. Can you believe it? I'm so emotional right now. Spice and Wolf is one of my all-time favorite anime and novel. It's simply magical.

"Wolf and Spice" completely new animation production decision!
── In February 2006, the 12th Dengeki Novel Grand Prize "Silver Award" winning work "Wolf and Spice" was released. It became popular as an economic fantasy with no sword or magic, and in February 2021 it celebrated its 15th anniversary in the series.
And this time, the production of a completely new animation of "Wolf and Spice" has been decided!
With the support of our fans, the story of the wise wolf Holo and the merchant Lawrence continues.

I don't want to be the gloomy guy who ruins the fun for everyone...but was this...necessary?
I mean, the brand of Spice And Wolf is not so much popular to justify anoter adaptation, and also the first one was not bad at all, from a directorial and technical point of view.
If you wanted to bring back its name, why a remake and not a sequel? And why after so many years, after all the hype has disappeared?
Said so, I'll wait to see who'll work on the project
It IS popular, have you not seen how much sales the novel has seen throughout the years (both domestically in Japan and overseas through Yen Press)?. A lot of Japanese people, and now overseas fans, still think of Spice & Wolf as a beloved IP. Hasekura Isuna even based his branding on Spice and Wolf because of its innate popularity (i.e. Spicy Tails).
Additionally, there's no confirmation if it's a remake or a sequel, but it's most likely the latter considering the taglines for the new adaptation are "Shall we embark on a journey again?" and "Holo the Wisewolf and Lawrence the Merchant's story continues."
In the anime industry, this type of move is not something producers want to do. Anime have to grant some kind of profit to be worth the effort, and the bigger the name, the bigger the profit must be. Just to make an example, the second anime adaptation of Fullmetal Alchemist, one of the most succesfull manga of all times, was wanted by Square just because the first one was not faithful, and they wanted another one to raise the sells of the manga. THAT was already something very rare. Imagine with something less popular like Spice And Wolf.
I'm not saying the novel is not popular, I'm saying is not ENOUGH popular, even with those numbers, to justify a possible remake or sequel after so many years, considering that the profit an anime could bring now are very few

Clearly it is.
Don't forget the overwhelming success of the VR novels. It proved the fans are still out there and willing to pay for new spice and wolf. They destroyed even some of the more far fetched stretch goals when they were crowdfunded.
The only reason it took this long is because of licensing issues. the author has said as much in the past.
I mean, yeah, that's how anime adaptations work, generally speaking. Sometimes, we do also get those 'for the fans, by the fans' types of anime (which are rare, but it happens).
I'm sure the producers already weighed all the factors you just mentioned and deemed the adaptation an okay enough move. I'm not sure what's your basis on popularity even is. If you mean it by being in mainstream media, then obviously, Spice and Wolf won't fit the bill. But the thing is, it IS still popular. The series didn't get cancelled at all for all these years, which would mean (1) it has a dedicated fanbase and (2) it's doing well enough to exceed profit margins for each volume released.
Just look at the recent tweet of the anime project, 30k likes and almost 30k RTs in 2 hours, that's pretty good. It even trended for quite a while. (Yeah ik this isn't a proper, proper basis for popularity, but eh)
Just a reminder that decision making is rarely so simple or black and white. The existence of the new anime proves that if you don't actually think its that popular. They reignited the novels just a few years ago after they had been finished for years. While a new season is surprising it shouldn't be that odd.

And yet, it exists. Your comments are expressing a concern that should only really be had for the producers of the anime. Frankly it shouldn't really matter to any of us if it makes money or not, just that its a good anime and that it hopefully continues.
Look at Fruits Basket another adaptation was made after almost 20 years and it did extremely well. Another remake is coming out of an anime called Tokyo Mew Mew after almost 20 years as well. Remakes of older animes/mangas are doing well and even though this is probably a sequel it's going to do just fine and there must have been popularity for them to do this. Anime is made as basically advertisement to manga series so it would have to have popularity or potential for them to do this

is there actual validity to this idea? or is this one of those myths casuals tout like "the animation was bad because of budget"
i get the idea behind it, that an anime adaptation is used to build the brand of an IP originating in a manga, but the anime industry is like several magnitudes greater than the manga industry. if you look at harry potter. i think the book sales actually come close to the box office counterpart, but that's looking at one of the high earning IPs of all time and ignoring all the money made off of other media (toys, games, harry potter world, etc). so the idea that publishing companies are investing huge, huge, huge amounts of capital into an adaptation in order to make less money on manga just doesn't make any sense.
Is this remake, ova, movie or season 3?
We don't know anything for sure yet, but based on the language used by the announcement and words from the creator it is sounding like a proper Season 3. It could possibly skip ahead to the continuation light novels but I feel like that would be shooting themselves in the foot since it's fairly clear that the majority of fans pushing sales will be the diehard fans of the original LN run.
Bro this is too good to be true. I've loved the anime ever since like early 2017 and have also been getting into the novel literally three days ago... what are the chances of something like this happening? This is legit the first time that I've been close to shedding a tear of joy because of an anime announcement. Truly a good time to be alive for anime fans, no?
