It's not necessarily an anime. It hasn't been confirmed what they're doing together.

The article linked in the first post here also seems to be assuming – it doesn't mention when and where it was officially stated to be an anime.
All it's stated to be is a "long-term project" – we have no idea what it might be.
Ufotable is an animation studio. We don't know the format yes, so it could be a series/movie. They don't tease a series of trailers as a large scale project. Also, Livechart has already listed Genshin as an anime on their website.

@Rinko We know that they will do something promotional at the very least, but as the partnership is specified long-term, the possibility of an anime being produced is very plausible.
