Looking for recommedations that would convince someone who didn't like anime at first to change their mind. Probably something less anime-y if that makes sense? We're assuming they already got the "AOT, HxH, and Death Note" treatment. And a show that would get you hooked within like 3 episodes before they get turned back off. I'm looking for BANGERS y'all, any ideas?

At first I didn't think csm was a great answer for this thread since it's shounen and MAPPA, but it's really a lot better action and first episode than the "AOT, HxH, and Death Note" treatment
Ofc Code Geass and Neon Genesis Evangelion would be great answers, however they both have a slower hook as you need to learn about the characters and world before you are truly invested in what is happening

Hm~. . .the thing is I do not know if there really are anime that would universally convince anyone to give this sub-medium another chance because of the fact people have different preferences in what they enjoy. The fact that in your scenario the person who hates anime were already expose to Attack on Titan, HunterxHunter, and Death Note, anime that are highly regarded by many, shows this as despite those three reaching popularity, they are not universally liked. So what exactly is going to be banger to anyone is more of a case by case bases. For this reason if I was going to convince someone to give anime another try I would take into consideration of their preferences such was "what is their favorite genre," "what tropes do they typically enjoy seeing," what themes are they interested in exploring". Something along those lines.
This is a good point, even if I was able to make the perfect list for beginners it'll never be a 100% chance that it'll convince someone to get back into anime. What I'm looking for though is more of a starting point so that once I get to know what they like and dislike, I can refer to this list to see if I can find something they might enjoy. You never know though, some people just don't like the idea of animation, but at that point I'd just give them some regular shows they might like.

I'm assuming they've also tried FMAB. Kaguya Love is War, and Spy x Family bc I think these are better for beginners and have a better first episode than the ones you mentioned.

From what I understand, I would rec shows that are abit unconventional from the norm whether in terms of artstyle/animation, plot, setting, storytelling/narrative etc. (and not the typical top 5-10 titles we always hear eg. JJK, MHA, AOT, HXH etc..) here are some shows that peaked my intrigue in the few eps & quite convinced me that anime was worth it :D

^ cause it doesn't feel like a japanese anime at all and it's unique enough that it can speak about anime range. (+ nobody would recommend it since nobody has seen it, which can help seduce people who are not seduced by the usual tropes in japanese animation)
LUPIN ZERO
^ lupin zero, as an introduction to a big (gigantic) anime series that never stopped to be popular in japan ; but also because it's short, and it's kind cartoony in some of the scenes so i feel like someone that likes cartoons but doesn't like japanese animation could enjoy it. also it's very recent but the art looks like old anime which makes it charming.
