In my opinion, the complete bible should not be adapted into anime. The project would be too ambitious for TV animation, and turning god into a picture would be blasphemous. Not to speak of certain plot inconsistencies and recap episodes that would ensue from a proper adaptation, as skipping over certain content would be very problematic as well.

The current approach of incorporating certain well-known parts of the bible into some shows (think Garden of Eden) is probably the more sensible and definitely less problematic approach.

EDIT: This pretty much applies to any other religious scripture as well.
