I'm a 34 year old husband and father and I watched my first anime two days ago (Fullmetal Alchemist: Brotherhood). It happened because DC Universe sent me a promo for VRV; my son was sleeping, I was bored, so I figured I'd give it a go. I had nothing against anime, it's just a boat I missed. Long story short, I'm addicted. I've now subbed to the CrunchyRoll super fan package, Funimation premium, a Shonen Jump manga (figured I'd give it a try, too), and I'm on here; I've also got Netflix, Hulu, and Amazon (I believe they have anime, too). I'm looking to get some recommendations from you veterans and perhaps make some friends--feel free to follow me and I'll follow you (if you want). Check out my list, it'll give you an idea of what I've been watching and maybe what you can recommend (I've enjoyed everything I've seen so far). Red Metal alchemist is kinda a nice one to start off on. Try some newer stuff like some shounen black clover naruto bleach to see what your likes are then older stuff like original berserk, macross, ninja scrolls, and fundamental gundam series. If into sports go for hajime no ippo, diamond no ace and haikyuu and Major. Ghost in the shell for sci-fi robotics lovers.

Also Ghibli movies, Makoto Shinkai movies and/or Mamoru Hosoda movies. Taking your list into consideration, you'd probably like the more fantasy-oriented movies from those lineups, but this stuff's (mostly) quite family-friendly if you want to share it with your partner and your kid. I'm not sure if they're available streaming everywhere, but they should be quite easy to find as discs.

Since most of the more popular action flicks are recommended here, I'm going to second @jjvoorhees' rec of "A Silent Voice" (Koe no Katachi) and @CBY's rec of Cowboy Bebop. Bebop is a classic for a good reason, and Koe no Katachi is one of the better anime takes on a character with a disability I've seen in quite a while. I'll add a few other shows here too:
Yojouhan Shinwa Taikei
One of the more zany Slice of Life titles out there, The Tatami Galaxy is a nice change of pace to mix in among more traditional and contemporary pieces.
Houseki no Kuni
Despite the hate that 3DCG gets from a lot of anime fans, Houseki no Kuni ("Land of the Lustrous") shows that every technique has a proper place to use it. I paid around $300US to get the blu-rays from japan, so that should give you an idea of how much I enjoyed it.

Don't let the cheap romance that forms the core of the plot fool you, SukaSuka's world and characters are a fresh breath of air in a genre saturated with a strange mix of extreme idyllic and crapsack worlds
Here are some real masterpieces. ( I'm going to recommend shorter animes because I'm not sure if you want to tackle huge ones like One Piece , Bleach or Naruto. )
Hunter x Hunter Hunter x Hunter 2011 Make sure you wath he original 1999 HXH first as it has better character devopment and overall trumps the 20111 version in every possible way. The only issue is the 2011 has two extra arcs that didn't happen yet in the original. However that in no way is an indication that it is supiroir at all. The chimera ant arc is one of the best acrs in the series but the fact that it wasn't done yet when the first anime was made means it will be left out. If you want you can even watch the original and then switch over the the 2011 version when you get there. The newer version pre chimera ant arc is rushed , not very memorable are impactful and even leaves out a very important scene in the begging.
Kiseijuu Sei no Kakuritsu
This is one of the most brilliant , thought provoking , tear jerking , deep and well written series I have ever seen. I must warn you though there is quite a bit of body horror , gore and death.
Monster
This one is an absolute masterpiece! If you watch only one of the animes I recommend this should be it. For once I recommend that you watch this one dubbed. I usually never even go near dubbed anime with a ten foot pole but since this anime takes place outside of Japan with only one Japanese character I think it makes more sense in English. Though ideally I would have liked a German version as it takes place in Germany but I can not find one.
I’m tackling a few longer ones, atm (Fairy Tail, which I loved the first episode of), so I’ll give some of the ones you noted a look. Monster will definitely go on the list.

Wouldn't know. Have not read it and if I do it wont be for a long time. All I know about the manga is it was made way before the anime in the 80s and because of this some purists didn't like the changes and it was not as well received as it should have been. Didn't the manga also show a few extra scenes of Migi and also Shinnichi and Murano's children?
Don't remember it too well. The anime was still enjoyable, but did barely anything visually to levitate the content of the manga. Colors look very flat most of the time and the art suffered a lot of times. Of course there's the voice acting and the OST, but c'mon... dubstep?

Initial D first season looks like ripped right from a PS1 game but improves visually from season to season ;D
We are going to scare him off with the amount of anime on offer!! One of us, one of us!
As you can see the amount on offer is immense, I suggest starting off with the short anime to not burn out and to get a feel for the media.
My two recommendations are;
I enjoyed this, and with Isekai being a big genre its a nice one to get into.
Isekai - Means transported to another world.
Not sure if you are into Sports, but its my favourite genre and this is amazing!

God tier animation and action scenes. If you like it don't watch the second season it's garbage tier, definitely read the manga. Btw OPM and Mob Psycho are from the same author, you may find some similarities.

It might be worth a look but yeah, Baccano's a great one to keep the pace going after you've started with something as good as Fullmetal Alchemist: Brotherhood!

I'd recommend Mahou Shoujo Madoka Magica, Steins;Gate, and Code Geass.
Madoka Magica is a nice magical girl anime that's more than it appears to be. If the idea of a magical girl show doesn't sound appealing to you, I'd say give it at least 3 episodes and see if it grabs your interest, there's a reason it has received widespread critical acclaim.
Steins;Gate is a really good time travel story with amazing characters. The downside is, a lot of people find the first half to be boring since it's mainly spent on buildup before the big twist that kicks off a gripping psychological thriller. Also the main character is awesome.
Code Geass is probably the most accessible of these three. It's the kind of show you can just sit back and watch and have a good time. I don't think it's as good as the other two, but it does very well what it wants to do.

Anyway, since you liked Fullmetal Alchemist, I also recommend Hunter x Hunter, like others did. (maybe the 2011 version if you like newer things, but if you like old aspects and such you can try the 99 version too)
I see you are watching Samurai Champloo, if you like that, then I recommend you 2 other anime:
Megalo Box (it's about box, of course)
Dororo (samurai)
If you like guns and future technology I also recommend Psycho Pass. (The first season is the best, you can skip the second one if you want because it's worse and many do not like it anymore)
If you like comedy I recommend Asobi Asobase.
If you like sports I recommend Haikyuu (for volleyball), Kuroko no Basket (for basket) and Captain Tsubasa (football), Yowamushi Pedal (cycling) also I think Slam Dunk is for basketball too?

So, I think one of the first things you should do is probably NOT start with the longer running series like Naruto, Bleach or One Piece, not that they're bad, they're just too long and too big of an investment, and being an adult with kids and a job, it's probably though to find the time for those. UNLESS you want to join your kid on the fun then I'd definitely rec watching Naruto or One Piece together and see if they enjoy, since it definitely has enough for both ages.
Other than that, definitely Steins;Gate and Death Note. But I'm more of a manga dude, so if you want that sweet, sweet Japanese comic book stuff, here's some stuff I'd rec starting with.
I'm not sure what is on Shounen Jump catalogue since it's not available here, but here's some Jump stuff that's definitely worth checking out:
Bakuman
This one is a bit big, but it's about working at Shounen Jump, it's a pretty interesting manga that'll let you know how Jump works behind the scenes. It's probably a bit emblemished, but it still touches upon a lot of dificulties and even problems of the system.
Eyeshield 21
Eyeshield is a sports manga about America Football, there's basically manga about any sport you can think of, so you may want to check around if you're a big fan of a specific sport, but Eyeshield is my fav out of the sport ones in general.
Ansatsu Kyoushitsu
A very different kind of manga, it's pretty fun and interesting, and it's pretty good despite some flaws. If you enjoy this one, check out Majin Tantei Nougami Neuro, which I like more, but the art is pretty bad, so I don't rec it to start with.
Non-Jump:
Pluto
From the author that did Monster, which is a classic and a certain must-read/Watch, but I think Pluto is a better place to start on Urawasa's works, it's a bit shorter and more concise, while his other works tend to be too big and confusing at times, still, he's probably the greatest mangaka alive, so you should definitely check out his works at some point.
Solanin
A slice-of-life about the annoyance of finally turning into an adult, this is a must read for anyone going through or that has gone through a quarter-life crysis, and felt lost when they finally started living their adult lives. This mangaka is one of my all time favourites, and if you enjoy Solanin you might want to check out his most famous work, Goodnight Punpun, tho have in mind that Punpun is quite a bit dark in tone.
Haruka na Machi e
This is a short manga that has won a lot of awards both in and out of Japan, so it's definitely one worth checking out even if you're not a fan of manga.
Anything I put in my custom list "Classics" I highly recommend to anyone. I'll write about them here, leaving out the ones I saw on your list.

One advice - don't make your 'plan to watch' list too big. It can be overwhelming and you can stuck watching nothing and trying to decide (or worse, looking for something new...). Keep it short and just watch, you already have many recommendations, when you watch some anime and you need more recommendations... well, you know where to ask :)
