I'd love more shows inspired by greek/roman mythology since that's something i'm interested in, and also (idk if this counts as a sub genre but :/) shows centred around college students as opposed to the typical school setting.
I totally agree. I love ancient Greek philosophy and mythology. For example I would love to see some adaptions of the Odyssey or the adventures of the Argonauts. Some simple stories about godly quarrels could be entertaining as well. Closest I've recently come has been Danmachi or Fate, two shows I really like. What would be some topics you would be interested in in closer detail?

I would like to see more samurai animes like Sword of the Stranger. Despite samurais being japan's history, there are a few serious samurai animes with gore action.
more action picked shows with dark vibes story since that is pretty low

Space/Ocean Exploration
I watched Space Brothers and Planetes and afterwards, I couldn't find any other good space anime like this. I know there's Gundam(mech) and Knights of Sidonia(aliens) and they were good but I want more realistic. Astra was good but I want to see more of travel within the solar system. A Place Further Than the Universe is a perfect example of the thrill of exploration(even though the show's setting isn't in space) in our own planet. And Cowboy Bebop too but Space Brothers and Planetes showed the tough road in becoming an astronaut and the dangers of space(near the Earth, not like 10000 lightyears away). I guess cuz Moon and Mars are only planetary bodies we can actually walk on with current equipment? So Space doesn't give much workspace but how bout the ocean and what's at its depths?
Racing with heavy fantasy/scifi elements. I'm struggling to find more like Redline and Oban Star-Racers.
I agree with you cuz that sounds fun but also, I really want to see more car-related sports anime. Like there are plenty anime where players use different techniques and slight change of trajectory of a ball can turn into their "special move". For cars, it could be messing around with gears, tires, spoilers, winds, etc... in an attempt to drive faster. It can be informative and competitive. I know there's Initial D but maybe in modern animation? Then again, it will probably be a CG mess.
I was overwhelmed when i learned about the insane physics behind Formula racing. For example when you're behind another car you take advantage of the slipstream effect, reducing the air drag. But because of that the downforce is also reduced, making the tires lose grip, called the "dirty air". Cornering too fast you overshoot, too slow and you lose downforce and start spinning. Then there's "track evolution" where on first laps the track has dust on it but as the race goes on the dust is removed and the tires lay down rubber and when you drive over the rubber lines you get more grip.
An actual military anime that isn't just an animated gallery of various firearms, tanks and weapons like most military-themed anime are. Think Youjo Senki but with less SONZAI EKKSU and more neat historical tidbits.
Economical anime would be quite dandy too, the bits in Spice and Wolf and Log Horizon dealing with basic concepts like supply and demand, market crashes and currencies were a real treat to watch, so I'd be more than happy to see a show that toys around with more advanced and modern concepts of the field.
I remember looking for more anime loosely based on an author's oeuvre when I was still on Kitsu (it was "Hummingbird" at the time). Examples of that would be

(based on Ango Sakaguchi works, since "un-go" in English sounds like "Ango" in Japanese).
The closest match I've gotten for a 3rd candidate is Aoi Bungaku, but that adapts different authors in an anthology format.
I also remember having a complaint about SSSS.Gridman not focussing on computers as much as it was hinting at (heck, the characters in Gridman have almost no computer literacy...!), so more anime about IT would be good too...
Just an anime that makes computers and/or coding fun and/or engaging is what I want at the bare minimum - it would be nice if it taught you the basics of computers and/or coding, as well. The closest I think I've gotten to that is Togo in Yuki Yuna and New Game! for making coding engaging. I've heard Serial Experiments Lain is kind of like what I want specifically for computers, but otherwise I have no matches.
Also CBDCT (cute boys doing cute things), since we sorely need more of that.
Honestly, I would love to see more good Survival-Thriller combination anime. I still need to see:

But yeah, more stuff like Mi Yu Xing Zhe, or even a second season. Was also excited for 7SEEDS but we all know what dumpster fire GONZO threw it into when making, even without watching it.
Dramatical time loops done right. If overlapped right, the story doesn't get repetitive but the key point is still there: the despair of the main cast as they try to override certain events
Main cast being thrown into desperate situations is what I like, for a change of setting from all the cute stuff or main cast dominating the scene
