I've read Violet evergarden LNs and did enjoy it so the anime should be no different. I'm not sure if I can watch rurouni kenshin OVA without the show though.

I'll try potemayo at least for the Chata ED. As for Gundam I'll probably start with the OG movies just because I want some context before trying out any other gundam. My most hyped ones are 08th MS Team and Turn A Gundam. Can I start with garupa pico? Thought it was between seasons but I guess not.

Cowboy Bebop I'll do eventually, least hyped for that compared to everything else you mentioned, even though I'll watch it for sure.
