... because of the strong bonds with everybody, even after Shouko disappeared from Sakuta's life, he managed to meet Mai and others (while in the original timeline it was thanks to Shouko). Either for the same reason, or because he also traveled in time, Sakuta was able to recognize Shouko even though he technically never met her. I like to think it's a combination of both.
