I've only seen the first 20 or so episodes now but from comparing to the manga it seems to go 1 Chapter = 1 Episode for most stuff, with some being split into 2 Episodes. It's an episodic storyline so this works out pretty well, so far I'd encourage watching it all since the show is about Tetsuro's journey and each episode has taught him another lesson.

Could change later down the road but figured I'd atleast give some sort of answer to you for now since it's been a month since your post.

Edit: I've finished the show, would definitely say it matches up pretty well. Some planets get 2 episodes instead of 1 but those are usually the better ones anyways.
