I suspect that the story of the game follows this first timeline, and the anime follows the new restarted timeline after the game, making the entire franchise an inception with two timelines shown at once.
To clarify this further. In the final chapter of part 1 of the game's story, you actually had these two choices presented to you by Akira after you got wounded by Kaiser Insight.
Choosing the second option eventually restarts the prologue of the game. The world basically got reset, like shown in the anime. Afterwards in the game, you're forced to select the other option.
The anime indeed seems to be a follow-up of the second choice, or maybe a follow-up of one of many instances or perhaps the final instance Yuuki chose to restart? The anime played it out really well and I'm curious to see how they're going to move forward with this.

About Saber in UBW
Saber did disappear in the end of UBW. What you saw from the sunny day OVA was an adaptation of the good ending from the VN. The true ending is the conclusion of the TV anime.
The next one I'd recommend watching is the Heaven's Feel movie trilogy. I don't know how much you know about stay night or Fate as a whole, but this essentially adapts the final route (Heaven's Feel route) from the visual novel. So it comes after UBW.
If you care enough, you could watch the 2006 anime before the Heaven's Feel movies. This adapts the first route (Fate route) of the VN. It's generally not a great adaptation but it's not too bad of an introduction imo. I usually recommend people to start with this one if they really want to experience everything (unpopular opinion).

After HF, you can move to Fate/Zero, which is the prequel to all of stay night. Once you've gone through all of these, you can move to any spin-off. I'd hold off on Fate/EXTRA Last Encore personally since it requires knowledge from the original game.

Yeah, those are RE:Start's. Anime versions usually release on the same date as artist versions, so I doubt that there is ever going to be one tbh. The album releasing in June (see full listing) might be the OST, so they might have the TV size there at the least.

There's one thing I forgot to mention. Heaven's Feel is made up as a movie trilogy but the last movie is currently being showcased at theaters. And I don't think they've announced a date on a BD release. So depending on if you can wait or not for that release or whether you have the opportunity to watch the last movie in theaters, it's understandable if you watch Zero before Heaven's Feel.

People just like to bandwagon on the whole "Deen/stay night-is-bad" thing. Sure, it's bad as an adaptation, but it's decent enough for an anime, at least for me. But that shouldn't matter to your regular anime watcher who hasn't read the source material for themselves.
I agree with @Drekaelric's watch order. I find it's the best anime-only Fate experience as the source material was originally released in that order (stay night -> Zero). I'd highly recommend reading the VN ofc. ![]()
I still don't get what different routes mean, is it like different scenarios if path is chosen differently?
So now should I watch Fate/Zero or UBW? and what is HGW?
@Ecolized Yes, a VN (visual novel) usually gives the player choices for different scenarios to happen and ultimately branching to complete different endings. stay night has 3 as you may know: Fate (where Saber's the heroine, which the 2006 anime tried to adapt), Unlimited Blade Works (where Rin's the heroine, which ufotable adapted) and Heaven's Feel (where Sakura's the heroine, which ufotable adapted).
Those three routes compose the entirety of Fate/stay night. Each route is like a building stone for the next one. This is why people need to start with the 2006 stay night. Because if you jump to UBW, you're literally missing the first building stone. Obviously, it had its problems but as mentioned above, it's a good introduction.
If you've finished 2006 stay night, the order you can take is: Unlimited Blade Works TV anime> 3 Heaven's Feel movies > Zero.
