To me it sounds like you're experiencing a burn out on anime. I've been watching anime for over two decades and it goes through phases where one thing becomes successful so everything that's produced for a time period becomes just repeats of the exact same thing with some minor changes. Also just because something is rated well or highly recommended that doesn't mean it's good to you which is fine. If this "really good shit animes" is boring to you then it's by default not "really good shit" to you. To me it sounds like you're not watching anything "good" and just watching stuff you WANT to like because it's checking off the boxes of what you've liked before which would get boring. This is at least my understanding of what you're saying so I could be wrong.
The only real solution is change up what you're watching by checking out genre that you don't really watch, cut back on watching as much and start reading manga/light novels/webcomics/etc or just plan take a break which is fine as well. Personally, I like changing genre, watching different era's of anime or following a voice actor and randomly picking something they've been in that I haven't seen before whenever I find myself getting bored.
It really has proven that the binge model doesn't work that well. It's why pretty much all other streaming services have gone back to the weekly format and Netflix has a reputation for cancelling their shows if they're not immediately popular enough even if they do well. I'm someone who also binge watches shows but it's obviously bad for marketing a show and building up momentum for a show. Netflix did a dump on this one because they honestly don't have faith in it, not saying the show is bad, and are probably planning on it just being the single season or outright cancelling it.
It's exactly like Jobless but only without a soul. I like that the MC isn't as perverted as Jobless but it also had zero emotional depth to the character. It's still early so that can easily change especially with a 24 episode season but the character just seems like a typical isekai and is emotionally flat.
